Under leadership of the Director of OPs, the Director of Concessions will be responsible for effectively and profitably managing and directing all day-to-day aspects of the Concessions Operations. ESSENTIAL FUNCTIONS - Responsible for operational budget, managing monthly P&L statements, and ensuring that all financial reporting is accurate. Provide leadership, coaching, and mentorship to Concession managers and staff responsible for executing the Concessions business plan. Sustain cost as it pertains to labor and operating supplies, working within budgeted guidelines. Provide efficient service and quality products by maintaining positive customer and client relations through effective communication and prudent financial practices. Accountable for establishing and maintaining proper safety and sanitation procedures as well as ensuring proper repair and maintenance of food service equipment, create a working relationship with local health officials, and work closely with facility maintenance team to upkeep equipment. Ensure unit compliance with federal, state, local, and Legend’s regulations regarding the sale of alcohol. Coach and train Concession leadership team to effectively monitor and manage compliance. Maintain management staff and ensure proper hiring and promoting of associates per Legend’s standards. Work closely with multiple sub-contractors to ensure all needs are met and terms of the contract are followed. Process invoicing and follow-up to ensure Sub-contractor payment is completed in a timely manner. Preserve existing programs and develop new concepts to ensure the highest possible quality of food service and innovation. Oversee monthly inventory for concessions operations and assist with developing yearly operational budgets. Analyze monthly operating schedule to determine operational needs and communicate operational plan with Concession management team and facility client. Work closely with Concessions culinary team to determine and regularly evaluate production pars for all food produced by event type. Analyze Concession liquor yields on a regular basis to identify trends and sustain costs and consistency. Follow and encourage team to follow all safety policies and procedures, including but not limited to looking for and reporting any unsafe work conditions and complete company-wide safety training and any additional job specific safety training. Report all safety incidents (injuries and illnesses) into the Company’s risk management system (Origami Risk) on the same day that the safety incident has been reported. Work with leadership on Step one grievances with the Union. Perform other related duties, tasks, and responsibilities as required. QUALIFICATIONS - The ideal candidate will have a bachelor’s degree with a minimum of 5-7 years' management experience in the high-volume foodservice industry, preferably in a concession environment for a sports and entertainment venue. Union experience is strongly preferred as this is a entirely union department. Must have excellent written and verbal communication skills and the ability to multi-task and prioritize in a deadline-oriented environment. Demonstrate leadership and vision in managing staff groups and major projects or initiatives. Customer service-oriented mindset with the ability to communicate with employees, vendors, client representatives and guests in a positive and professional manner. Must be flexible to work extended hours due to business requirements including late nights, weekends and holidays. Must be able to work in a team environment. Knowledge of accounting policy and procedures and POS Systems is preferred. Proficiency in Microsoft Word, Excel, and PowerPoint. Ability to obtain and maintain TEAM Coalition Alcohol Certification. Experience with ABI, Yellow Dog, UKG/ UltiPro, Workday/ My venue preferred. COMPENSATION - Competitive salary range of $88,000 - $93,000 plus bonus potential commensurate with experience, and a generous benefits package that includes: medical, dental, vision, life and disability insurance, sick leave, paid vacation, and 401 k plan.
